My ex-colleague, Shilpi, is such an exuberant and enthusiastic person that her positive energy permeates even through Facebook. Shilpi’s regular updates about her activities with her children, Rishabh and Ryka, are truly delightful. She has been very encouraging about my blog right from the beginning and participates on my Facebook page actively. If you’ll remember, on my Facebook page, I had shared a post about the health benefits of sweet potato.
I had asked you’ll to share your favorite sweet potato recipe. Shilpi had replied saying she likes sweet potato fries, and for Ryka she makes sweet potato lentil soup. I asked her to share the recipe and pics for the blog. And this awesome lady sent across the recipe and pics the next day. At this point I must mention Amla as well. I know Amla through my blog and she is another super enthu mom. Whenever I ask her to share her recipes and pics, I get them within a couple of days. I always end up feeling charged up whenever I interact with super moms like Shilpi and Amla.:-)
Shilpi’s daughter, Ryka, is an absolute doll. She recently got a haircut, which I fell completely in love with. I asked Shilpi to send me one of their pics with Ryka’s new haircut; doesn’t she look adorable? Now without much ado I’ll hand over the baton to Shilpi. Shilpi writes: My daughter, Ryka, is 14 months old and ever since she started on solids I have been trying to introduce her to a variety of foods. It is a case of once bitten twice shy. When my son, who is nearly 8, started solids I used to give him only rice based foods, mostly khichdi with lots of veggies. Though, he was always a healthy baby he grew up to be a timid eater. I didn’t want the same thing to happen to Ryka, I want her to be a intrepid foodie, so since early I am on the job.
Sweet potato is considered one of the healthiest vegetables so that is one dominant veggie on her food chart. I tried to give her sweet potato mashed but she spits it out. So I made this lentil and sweet potato soup, and as it is a bit runny she likes it and eats it without any fuss.
