Carrot and Tomato Salad Recipe

Recipe of a low calorie salad made using vitamins-rich carrots and antioxidants-rich tomatoes. Adding lemon ups the vitamin C quotient too.

Ingredients

  • 1 cup peeled and grated carrot
  • 1 cup chopped tomato
  • 1 tbsp lemon juice
  • Pinch of sugar optional
  • 1 tbsp chopped coriander
  • Salt to taste

Instructions

  • Take the grated carrot and chopped tomato in a bowl. Younger kids find tomato peels difficult to chew. So if your toddler cannot chew food properly, peel the tomato before chopping it.
  • Add salt, sugar, and lemon juice, and mix well. (If the carrot is fresh and sweet, you don't need to add sugar.)
  • Add chopped coriander and mix properly. (Please wash the coriander, actually all the vegetables for that matter thoroughly as your child will be eating them raw.)

Notes

You can add chopped green chili in the salad if you are making it for grownups. (Deseed the chili before chopping it in small pieces.)
